The proof is quite evident on the nose, grabbing the sense with vigor. As this settles, however, caramel, vanilla, cloves, nutmeg, hints of pear, and dry oak all begin to present themselves. On the palate, there is a big jump in spice character before settling into toffee, dark fruits, sweet corn, and cinnamon. There is a very nice mouth-coating quality to this bourbon that parlays into a long finish. The heat is definitely there with oak, vanilla, white pepper, pears in syrup, and more rye spice. This bourbon delivers on its namesake, but is developed enough to not be overtaken by the heat, a really fine expression from 1792. - Ray's Spirits Team
