The nose on this rum absolutely reaches out of the glass. Moments after pouring scents of anise, cinnamon, fresh-cut grass and orange blossom caress the nose. Following this, there is rose water, candied pineapple, butterscotch and a gentle whisper of vanilla. The palate is upfront with sweet spice, pear syrup, white grapes and melon. Following this is black pepper, currant, eucalyptus, honey, orange zest and oak. The finish is bright and green with more eucalyptus, tea, honeysuckle, cloves and hazelnuts. It lingers for a long time with demerara sugar, oak, melon, pineapple and vanilla. The proof is present but never overpowering, lending to elevate the flavors within, not quash them. This rum is truly something special, delighting in cocktails, but best enjoyed as a sipping rum that shows layers of flavor with each taste. - Ray's Spirits Team
